Everything we know,
we learned from fire.

Before ovens, before thermometers, before menus, there was a ring of stones and a person tending it. We cook the way people have cooked for four hundred thousand years, and we set the table like it matters. Because it does.

01 · The Hearth

A net loft,
given back to warmth

For eighty years this building dried fishing nets above the tide line. When we found it, the beams still smelled of hemp and salt. We built one thing inside it: a hearth of local stone, four feet deep, that has not gone fully cold since the night we lit it.

The fire is laid at two in the afternoon. By six it has fallen to coals, and coals, not flame, are where cooking lives. Every dish you eat tonight passed through that single glowing bed.

03 · The Chef

Mara Ostrander
keeps the fire

Mara grew up on a fishing boat out of Princeton Harbor and spent twelve years in kitchens that measured everything. Then her grandmother died and left her a cast-iron pot, a box of letters, and one instruction: “Cook like the power is out.”

She staged at Asador Etxebarri, came home, and spent two winters learning what our local oak wants to do, which is not what Basque oak wants to do. Ember & Salt is the result: a restaurant with no hobs, no ovens, no fryers. One hearth. She lays the fire herself every afternoon, and she is the last to leave it.

04 · Reservations

Twenty-two seats,
held by hand

We release tables on the first of each month for the month following. No booking platform, no algorithm. You write to us, and a person writes back within a day. Tell us who you are and what night you hope for.

The menu is fixed; we adapt gladly for allergies with notice. Children of patient temperament welcome. The room is warm. Dress for firelight, not for weather.
